French Toast Casserole
Moist and sweet. No need to use syrup.
1 loaf French bread - cut into 1 inch cubes
Cream Cheese - about 4 oz.
Fresh blueberries if available - DO NOT use frozen
2 cups milk
1/2 cup maple syrup
1/2 cup sugar
1 tsp vanilla
1/2 tsp. cinnamon
1/4 tsp. nutmeg
put 1/2 the bread in a buttered 1/2 size steamtable pan. Dot cream cheese on this layer. Sprinkle with fresh blueberries. Layer the remaining bread on top. Make the mixture and pour over. Push the bread mixture down so it is wet. Let it sit overnight. Bake in 375 oven for about 20-30 minutes depending on the oven. Option is to make a sugar glaze for the top.
Serve with toasted pecans on the side or your favorite fruit or syrup.
Can be made without the blueberries.
