the Italian Hand made Pasta

the following recipe is the original traditional italian one , useful to prepare RAVIOLI, TAGLIATELLE, TORTELLINI,LASAGNE ....


Ingredients
400 g. of tender grain flour 00
4 eggs
1 spoon of water (if necessary)

Steps
Sifting the flour as a fountain on the table (better a marble table),
adding to the center eggs. Mix them using one fork or a spoon.
Therefore to incorporate a flour from the inner edge.
With a circular movement more and more to incorporate flour from the edge
until when to the center a dense paste has not been formed.
With both the hands to uniform distribute the flour of the edge over the paste
operating from the outside towards the inside. To proceed making attention
that nothing comes out. To push the flour under the paste and then to
incorporate it completely with the hands. If this operation had to turn out
difficult, to add a water in order to make to absorb all subsequently the
flour and pressing with the two inches. To refold the paste and to
incorporate energetically the remaining flour using both the hands.
Now begins the "impastatura". To pull the paste with the palm of the hand,
to refold it and to turn it towards the inside. To form a smooth and compact
paste to ball shape, make it to rest for about an hour.
