Delicious puffy pancake that is baked in the oven! Great topped with a fresh blueberry sauce.
6 large eggs
1 cup whole milk
1/4 cup orange juice
1 cup flour
1/2 cup sugar
pinch of salt
Powered sugar for garnish
Preheat oven to 425 degrees.
Put everything into a food processor and blend just until everything is incorporated.
Put 4 tablespoons butter into a 10 inch ovenproof frypan heat in hot oven until just melted. Remove from oven & pour batter into pan. Return to oven for approx. 16-18 minutes until puffed & golden. Sprinkle with powdered sugar and serve with blueberry sauce.
