Stuffed French Toast Ingredients 2 medium loaves wide Italian bread One 8-ounce package cream cheese 8 ounces cottage cheese 1/2 cup dried cranberries, soaked in orange juice for ½ hour 1 Tablespoon grated orange peel 6 eggs 1 cup whole milk 1 teaspoon vanilla ¼ teaspoon nutmeg ½ teaspoon salt Confectioner’s sugar Steps Slice Italian bread (2 days old) into 1-inch slices. Discard ends. Slice large pocket in bottom of each slice. Make stuffing with cream cheese (softened), cottage cheese, soaked cranberries, and 1 Tablespoon grated orange peel. Stuff bread using rounded knife. At this point bread can be refrigerated, frozen, or used immediately. Make batter using eggs, milk, vanilla, nutmeg, and salt. Generously butter skillet or griddle (electric skillet 375 degrees), dip bread in batter and cook for 3 minutes on each side or until nicely browned. Place on heated plate, sprinkle with confectioner’s sugar. Serve with warm Vermont maple syrup and garnish with orange slices. Enjoy!! Preparation time: 30 minutes Serves: 12 |
