Bed and Breakfast Center Recipe

Welsh Cakes

as we make them at My Little Welsh Home B&B.

4 cups flour
1/2 cup sugar
1/2 tsp. nutmeg
1 tsp. salt

1/2 cup margarine
2 tsp. baking powder
3/4 cup currants
2 eggs, beaten
1/3 cup milk

Sift dry ingredients together.
Cut in margarine until the texture of fine crumbs. Add milk to the well beaten eggs before adding to dry mixture. Add currants. Mix to a stiff dough. Roll out to 1/4-inch thickness and cut out 2-inch to 3-inch rounds. Cook in electric frying pan at 350 degrees F or on lightly greased pre-heated griddle or cast iron frying pan. Fry each sides 4-5 minutes or until medium brown. Eat fresh, after the Welsh cakes have cooled down a little, or freeze and reheat in oven (not microwave, as they will turn soft) when required.
