Morning Meusli Bread
a moist almond flavored fruit bread
Ingredients
2 cups muesli cereal (with nuts & fruits) 1 cup sugar ¾ cup milk 1/3 cup oil 2 large eggs ½ teaspoon almond extract 1 ½ cups flour 2 teaspoons baking powder ½ teaspoon salt
Steps
Preheat oven to 350 degrees. Grease one large (9”x5”x3”) or 2 small loaf pans.
Crush cereal in blender or cuisinart to equal 1 1/3 cups. Reserve 1/3 cup for topping.
Combine cereal, flour, baking powder and salt in a large bowl.
Combine sugar, oil, milk, eggs and almond extract in small bowl.
Add sugar mixture to flour mixture.
Pour into prepared pan(s). Press reserved cereal on top.
Bake at 350 for 50 to 60 minutes. Cool 10 minutes then turn out on rack. Freezes well.
