Buttermilk Biscuits

From a long line of Virginia cooks!


Ingredients
1 cup self-rising flour
1 1/2 teaspoons sugar
1 1/2 teaspoons baking powder
4 1/2 oz vegetable shortening
3/4 cup buttermilk


Steps
Preheat oven to 400 degrees.

Combine self-rising flour, sugar and baking powder in a large bowl. Cut in shortening with pastry blender until mixture resembles coarse meal. (Can be stored in an air tight container in the refrigerator at this point.)

Combine biscuit mix with 3/4 cups cold buttermilk until the dough is slightly sticky. Form dough into a ball and place in the middle of the floured work surface.

Knead the dough with the flour bringing the outside into the center and pressing downward. Repeat 10 times.

Roll dough until 1/2" to 3/4" thick. Cut with 3-inch biscuit cutter and place biscuits on a ungreased baking sheet. Bake 12-14 minutes until golden brown top and bottom.
